Did you know that in Eastern Europe the first run of birch sap each season was once considered the “fountain of youth?” It was reserved for royalty, and no wonder. One serving of birch water contains five times the amount of manganese than a cup of kale.
Tree sap isn't just for making syrup. Many cultures utilize the first run of tree sap in their springtime cleansing rituals. Here we talk about why we're motivated to tap (hint: it's not for syrup!).
